Happy 4th of July everyone!! I hope everyone has a wonderful and safe day. Today I am sharing with you another recipe of the week and this past week I made roasted rack of lamb with rice and broccoli. This is a simple but delicious meal and one of my favorites when I want something a bit more savory.
The rice & broccoli are pretty self explanatory you can cook them anyway you like :) I like to sauté the broccoli in the pan with some olive oil & garlic paste but again anyway you want to make them you can. As for the lamb you can cook it in a few different ways but I really enjoy roasting them in the oven.
1st: I season them with some salt and lemon pepper. 2nd: I then I cook them in a pan on the stove for 4 minutes on each side. Lastly I put them in the oven for an additional 6 minutes on very high heat( like 400 degrees) to get that crispy outside but juicy inside. I should also say I don't like my meat rare in anyway so adjust the time if you like your meat a little less done!
The totally time of this meal is about 20 minutes in total between the lamb, rice, and sautéed broccoli and you will have a wonderful balanced meal in a short amount of time perfect after a busy day!
