It’s officially Fall! My heart is so incredibly happy. My favorite season is here and i’m so excited for all that is going to come. Any one else’s favorite season is Fall? Let me know in the comments.
Today I am kicking off fall with an autumn recipe and to do so it of course had to include pumpkin. This pumpkin chili is delicious and so easy to make. You don’t even need a slow cooker to make it.
There is something about making chili during the fall that is so comforting. It really warms you up as the temperatures are dropping outside. I always feel I can snuggle in and watch something cozy on the tv with a good bowl of chili. It makes for a perfect autumn evening.
This pumpkin chili didn’t disappoint. I thought adding pumpkin might make it weird tasting but it actually gave it such a creamy velvety texture that made it feel rich even though it wasn’t. It’s actually quite healthy and super filling. After the chili was cooked I added my favorite toppings and was good to go for my cozy night ahead.
I love to add toppings to my chili but I know everyone has different taste on that. I like to add GF crackers and a little cheese. What about you? Are you a topping or no topping gal??
